Nothing too special here. Just some recipes I throw together. If Matt likes them I take a picture and put them here for the next time.

Tortilla Soup

This is one of the meals that says, "Did you write this recipe down?" So it must be good...to him anyway.
In the crockpot I browned some ground burger with onion.
After it browned I added the tortilla soup mix shown above.
I then added a can of seasoned beans (any type you want).
I also added a can of corn with juices.
A can of diced tomatoes (mine were italian but any would work)
I had fresh mushrooms that needed to be used so I threw a whole lot of them in.
And four cups of water .
I let it it get warm and served it with tortilla chips, sour cream, and shredded cheese.
I ate mine with no garnishes and it was delicious.
If you like spicy, a can of green chilis would make this even better.  (It is hard enough to get Addison to partake in our meals as it is so I left the "spicy" out)
Leave out the meat and make it vegetarian (hmmm actually I don't know if the soup mix had meat products in in, so maybe not).

Cheeseburger Salad

Hey, nothing is better than an unhealthy salad.  Actually it could be a heck of a lot more unhealthy but here is the gist of it.
Mixed greens.
Brown Bison/Burger with any hamburger seasonings you would oridnarily use.
I put frozen mixed vegetables on it too.
Tomatoes, Pickles, French Fries.
I think this has sour cream for some reason.
Matt used the last of the Dorothy Lynch Dressing so I used Ketchup and Mustard as my dressing.

Mom's Oatmeal Bars



These things are always so good and easy to make.

3 Cups Oatmeal
1 Cup Butter
2 1/2 Cups Flour
2 Cups Brown Sugar
2 tsp Vanilla
2 Eggs
1 tsp Baking Soda

Mix these ingredients.  Spread in the bottom of an 8x13 pan.  Leave out about 1/3 of the mixture to make the islands on top.

1 1/2 Cups Chocolate Chips
2 Tblsp Butter
2 Tsp Vanilla
1 can Sweetended Condensed Milk

Melt this on the stove top.  When melted pour over the oatmeal layer.

Dollop the mixture that was put aside on top of chocolate layer.

Bake in the oven at 350 degrees for about 25 minutes.

Meatloaf as a Meal

The picture doesn't do it justice.

I prepared meatloaf as I always do.

One pound ground buffalo
One egg
One box of stuffing with seasoning
1/2 of an onion.

Mix these ingredients and put in a loaf pan.

I covered this with dorothy lynch dressing but use whatever you like.  I put shredded cheese over the top of the dressing.  I had prepared instant mashed potatoes and added parsley.  I put this over top the cheese.

Bake in the oven at 350 degrees for probably an hour and a half.  The potatoes really slowed down the cooking of the meat.

Aaron's Tortilla Rollups

One package Cream Cheese
One cup Sour Cream
One small can Green Chilis
One small can Chopped Black Olives
One cup Shredded Cheese
Chopped Green Onions or Yellow

Mix together and spread on a tortilla.  Roll up tortilla and referigerate for a few hours.  Cut into one inch slices and serve with salsa.

Buckeyes


2 Cups Creamy Peanut Butter
1/4 Cup butter or margarine (softened)
3 1/4 Cups Powdered Sugar

Mix peanut butter and margarine until creamy.  Add powdered sugar until mixture holds together.  Roll into balls and place on waxed paper.  Freeze for one hour.

2 Cups Chocolate Chips
2 Tbls Crisco

Slowly and carefully melt chocolate.  Dip balls into chocolate and place on waxed paper.  After all balls are dipped drizzle remaing chocoloate over top.

I like to add something for a little crunch.  I have done crunchy peanut butter instead of creamy, rice krispies, cocoa puffs.  Use your imagination, it is peanut butter and chocolate, chances are you won't mess it up.



Mint Oreo Truffles

These were soooo good.

One package mint oreos
One package cream cheese
Powdered sugar to thicken

Mix these ingredients until they are at a consistancy that you are able to roll them into balls.
After rolling into balls, freeze for an hour.

Chocolate (any kind)
Crisco

Melt chocolate in microwave or on stove with crisco.  Be careful not to heat too quickly or too long.
Roll balls in chocolate.
After this I melted some andes mints and used them as the drizzle for the top.

Keep refrigerated.
