Crock Pot Chicken Parmesan

One of my favorite recipes!

Crockpot Chicken Parmesan

This one of my favorite recipes and these breadsticks make it even better.  crazy good, phenomenal breadsticks
  • 2-4 boneless, skinless chicken breast halves
  • 1/2 cup Italian Seasoned Bread Crumbs
  • 1/4 cup Parmesan Cheese
  • 1/4 t black pepper
  • 1/4 t kosher salt
  • 1 TBSP olive oil
  • 1 egg, beaten
  • sliced or shredded mozzarella cheese
  • favorite jarred marinara sauce, I use Trader Joe's Tomato Basil Marinara

Spread the 1 TBSP of olive oil into the bottom of your crockpot stoneware insert.
Beat the egg with a fork in a separate bowl.
Mix the bread crumbs with the seasonings and the Parmesan cheese in another separate dish.
Dip the chicken into the egg, then into the bread crumb mixture, coating both sides with crumbs, cheese and seasonings.
Place the chicken breast pieces in the bottom of the crockpot.
Layer 2-3 slices or 1-2 cups of mozzarella cheese on top, depending on how much cheese you like.
Cover chicken and cheese with entire jar of marinara sauce.

Close lid and cook on low for 6-7 hours or high for 3-4. I cooked mine on high for about 3 1/2 hours and the chicken was perfect!
Serve with your favorite pasta.

Breadstick Recipe
  • 1-½ cups warm water
  • 1 TBSP instant (rapid rise) yeast from a jar.  Sorry, the packets don't hold a full TBSP
  • 2 TBSP sugar
  • 3-½ cups all purpose flour
  • ½ tsp salt
  • 2-4 TBSP Extra Virgin Olive Oil
  • 1 TBSP garlic salt
  • 1-2 tsp herbs/seasoning of your choice.  I am using an herb blend that is for mixing with olive oil and dipping bread, but any herb or combo of herbs that you like would work well.
  • 4 TBSP melted butter
  • 1/4 cup grated Parmesan cheese

Mix together water, yeast, sugar, flour, and salt in a large bowl or electric mixer and knead for three minutes. Let the dough rest for 10 minutes.
Heat oven to 375 degrees. Spread 1-2 TBSP olive oil (just enough to coat) onto the bottom of a 16"x14" cookie sheet.  Roll out the breadstick dough about 1/4 to 1/2-inch thick and large enough to fit onto baking sheet.  Place whole sheet of dough on baking sheet, then brush 1-2 TBSP olive oil over top of dough making sure it is all lightly covered.  Sprinkle garlic salt and herbs of choice over top of olive oil.  Using a pizza cutter, cut breadsticks into desired length and width.   Cover loosely with plastic wrap and let rise for 30 minutes.
Remove plastic wrap and place in preheated oven and allow to bake for 15-17 minutes until golden brown.  Remove from oven and brush melted butter all over top and sprinkle with Parmesan cheese.

Spider Dogs

In the spirit of Halloween I made these.  I poked four unboiled spaghetti noodles through hotdogs cut into thirds and boiled them until the noodles were ready to eat.  I served with ketchup.  I had to assure Addison they weren't real spiders before she would even come close to them.

Oven Chili Dogs

This recipe may seem a bit silly I know. When I saw it I thought "who needs a recipe for chili dogs?," but then I tried it and I realized Oven Hot Dogs are something special.

IMG_7588

I don't know why baking the chili dogs makes such a difference, but it does. The mustard and relish were also a wonderful surprise.  The combination of smoky chili with tangy mustard and relish was amazing. It really made regular chili dogs into something a little unexpected.

Ingredients:

8 hot dogs
8 hot dog buns
1 can of chili
1/2 an onion, diced
cheddar cheese
mayonnaise
mustard

Directions:
Preheat over to 350 degrees.
1. Line inside of hot dog buns with mayonnaise and sweet relish. Evenly add mustard. Fill with hot dogs and squish into a 13×9″ baking pan.
2. Top hot dogs with chili, cheese, and diced onion. Cover with aluminum foil and bake for 45 minutes.

Shipwreck Casserole With a Twist

I don't have a picture because I didn't know it was going to taste so good.

A box of scalloped potatoes
A pound of beef
2 Cups frozen vegetables
1 Can Cream of Mushroom Soup
3/4 Cup Sour Cream
Shredded Cheese to Top

I prepared the scalloped potatoes as directed on the box with about half of the water required.
Mix the beef (uncooked),vegetables, sour cream, and soup in a bowl.
Pour the potatoes in a greased 9x13.
Spread beef mixture over the top.
Top with shredded cheese.
Bake at 375 for about an hour.

I had dished a serving out for myself and Abrie ended up eating the WHOLE thing except two bites I was able to sneak.  And Addison had seconds as well.

Cake Balls

Addie loves them, Matt hates them ("if I want cake I want cake, not a ball")

These are great for any cake wreck you might have.
Just make a cake, bake it like normal.
Crumble the cake and add a contianer of desired frosting.
Roll into balls.
Freeze
Melt desired chocolate coating.
Dip Balls in coating put on wax paper.
Eat.

Tortilla Soup

This is one of the meals that says, "Did you write this recipe down?" So it must be good...to him anyway.
In the crockpot I browned some ground burger with onion.
After it browned I added the tortilla soup mix shown above.
I then added a can of seasoned beans (any type you want).
I also added a can of corn with juices.
A can of diced tomatoes (mine were italian but any would work)
I had fresh mushrooms that needed to be used so I threw a whole lot of them in.
And four cups of water .
I let it it get warm and served it with tortilla chips, sour cream, and shredded cheese.
I ate mine with no garnishes and it was delicious.
If you like spicy, a can of green chilis would make this even better.  (It is hard enough to get Addison to partake in our meals as it is so I left the "spicy" out)
Leave out the meat and make it vegetarian (hmmm actually I don't know if the soup mix had meat products in in, so maybe not).

Cheeseburger Salad

Hey, nothing is better than an unhealthy salad.  Actually it could be a heck of a lot more unhealthy but here is the gist of it.
Mixed greens.
Brown Bison/Burger with any hamburger seasonings you would oridnarily use.
I put frozen mixed vegetables on it too.
Tomatoes, Pickles, French Fries.
I think this has sour cream for some reason.
Matt used the last of the Dorothy Lynch Dressing so I used Ketchup and Mustard as my dressing.
